I love that the last thing I bake while in self-isolation is banana bread. While it was the first thing everyone else was making. I have always been weird that way, never following trends or watching popular Netflix shows when they are trending ... I am the only one who has not watched Tiger King and I am okay with that.

This banana bread recipe is a healthy recipe that I have made for years! It has NO butter and NO sugar. I like to substitute ingredients for healthier options. That being said, you do not need to include the Nutella. You can add any toppings to this banana bread recipe or just leave it plain. I like adding chocolate chips and walnuts without the Nutella. The Nutella is just a fun change to your basic banana bread.
Recipe
⅓ cup melted coconut oil * let it cool before you add to the mixture
½ cup honey or maple syrup
2 eggs
mashed ripe bananas 2 large bananas
¼ cup milk , or lactose milk
1 teaspoon baking soda
1 teaspoon vanilla extract
½ teaspoon salt
½ teaspoon ground cinnamon, or more if you like cinnamon I add 1 tsp
¾ cups whole wheat flour
1 cup all purpose flower
Nutella
INSTRUCTIONS
Preheat oven to 325 degrees Fahrenheit, grease a 9×5-inch loaf pan.
In a large bowl, mash bananas. Add all your wet ingredients. *make sure your coconut oil is cool before adding it to your wet mixture. It has to be cool because if you add it to your mixture that has eggs the warm coconut can cook the eggs. This means you will have scrambled eggs.
Add your try ingredients and mix. I do not over mix because it can cause the batter when cooked to become dense and not fluffy. We want Fluffy!!! haha.
Pour mixture into your greased pan.
Nutella - add how much you want to the top. I put blobs all over the top of the mixture. Then I do a marble effect. This means after I put Nutella on top I take a knife and run it almost threw the banana bread and swirl it around the top of the wet banana bread mixture.
Now you can cook it. Mine always cooks for 35-40 minutes. However, I always say this:each oven is different! So keep an eye on it, it could need more time. You will know that it is cooked when you poke a toothpick threw it and it comes out clean.
