Lets upgrade from our COVID-19, staying at home typical banana bread recipe. I love banana bread I have a recipe for my favorite, healthy banana bread on my blog .

It is a great quick snack and breakfast option. However, I like to experiment with other recipes.


This double chocolate muffin recipe can be made healthy. I added the healthy version next to the not so healthy recipe.Honestly though the regular recipe is not that bad for you. I also convert a recipe I love to be healthy because I like my desserts to be healthy...I feel less bad when I eat more haha.. I know some grocery stores at this time are running low on certain things that is why I also included the original recipe. Not everyone can get their hands on certain ingredients, even though all these ingredients are household pantry basics. This recipe does call for banana's but you can not taste it in the recipe so it tastes like a bakery style double chocolate muffin. It is a great way to trick kids to get some nutrition in, especially if you use the healthy version of the recipe.


I tested the recipe out on my family and my aunts friends and they were all very impressed, as was I! It is super moist and fluffy muffin recipe.


When I state "or" that is the healthy version . I wanted to substitute the flour for an almond or coconut but it did not turn out, which is why I kept regular flour.

Double Chocolate Muffin Recipe

Dry Ingredients

  • 1 cup all purpose flour

  • 1/4 cup unsweetened cocoa powder

  • 1 tsp baking powder

  • 1 tsp baking soda

  • 1 pinch of salt or no salt - most of the time I never add salt

Wet Ingredients

  • 2 large eggs

  • 1/2 cup brown sugar or maple syrup

  • 1/2 cup melted butter or coconut oil

  • 2 large ripe bananas

  • 1 tsp pure vanilla extract

  • 1 cup chocolate chips


Instructions

  • Pre-heat your oven to 375 degrees F.

  • I keep this super easy ->

  • Mix the dry ingredients in one bowl.

  • Mix the wet ingredients in another bowl. I always melt the butter or coconut oil in the microwave before I mix it in with the wet ingredients. I always do this first and let it slightly cool before I add it in to the wet ingredients.If it is hot and you mix it with the eggs it will cook the egg.

  • Fill your muffin tins. It makes 12 muffins. Bake for 20-24 minutes . You can check to see if they are cooked by poking them with a toothpick and if it comes out clean they are done. I also take them out if I see a few crumbles on the toothpick.
